Collaboration with Burial Beer Co.
For this collaboration beer, we started out with the exact grain bill and water profile as Burial.
We then decided on going different directions with our hop selection to illustrate how you can showcase similar tasting profiles with different hops.
Where they used Vic Secret for notes of passion fruit and Mosaic to derive flavors of pineapple, we used Sultana to achieve the passion fruit profile and Simcoe to display a bouquet of pineapple.
The other main similarity of our respective beers is our use of a highly acclaimed new ingredient. Our first endeavor with Phantasm is among us. These New Zealand Sauvignon Blanc freeze-dried grape skins are utilized in the same way as hops. The beauty of Phantasm is that you get a multitude of flavors, but it’s use never results in that notorious hop burn.
The resulting beer oozes flavors of white grape fruit, sweet citrus with nuanced white wine grape must character along side the notes of pineapple and passion fruit from our hop additions.

A: The beer is rather hazy and a little pale yellow in color. It poured with a finger and a half high frothy white head that gradually died down, leaving a large patch of bubbles on the surface and a narrow collar around the edge of the glass.
S: Moderate aromas of pineapple are present in the nose along with notes of green grapes.
T: The taste follows the smell, except that the flavors of green grapes are more on par with those of the pineapple and there are also notes of passion fruit.
M: It feels medium-bodied and juicy on the palate with a moderate amount of carbonation.
O: I really enjoyed the combination of green grapes, passion fruit, and pineapple flavors in the taste of this beer.
