Appearance: Pale, cloudy straw gold, thin white head with short retention.
Aroma: Yeasty aroma with mild white grape notes.
Flavor & Aftertaste: Up front tart, followed by light grape fruit and graininess. Short finish with graininess. No bitterness.
Palate: Very light bodied. Lightly carbonated. Short finish.
Overall: This surprised me. It was quite light & refreshing. I expected a ton of funkiness and tartness; but it delivered a nice balance of sweet & tart. White grape juice character is prominent. Aromas are quite subtle, but you can pick up the white grape smell. It starts sweet but quickly transitions to tart with a pronounced graininess all through right to the finish. Finish it short. If you are looking for a lot of funkiness out of the wild ale yeast, I didn't find that in this batch.

Appearance: Pours a lightly milky-looking, soft pale yellow with a skimpy, brief, white head.
Smell: Squishy white bread, lactic sourness and white grape must lending a gentle minerality and subtle notes of pitted fruit.
Taste: Lightly bready, a touch of grain, wheat with a pop of lemon, mild sweetness. Restrained grape vinousnicity, still a bit minerally. Moderate lactic tartness to it. Turns towards a slightly musty husky quality on the finish.
Mouthfeel: Medium-thin body. Medium-light carbonation, though it's got some zip to it.
Overall: Fairly decent overall.

Great white grape character, super drinkable, nice complexity in a tight little package. I keep buying it for myself, but my girlfriend ends up getting to most of it before me.

Interesting. Solid grape nose, dry, spot-on sour with no bad after-taste, pleasant mild bubbles. Comparisons to a non-sulfite-containing cava. Would def get again.
