wanted to love this one, and thankful to have been able to drink it, but it really didnt quite take me where i wanted it to, just my second beer from these guys to date. its a wild tart saison type with cardamom, juniper, coriander, and ginger, very unique brew. deeper than golden colored to almost brassy, good shine, short white head on it from the bottle. aroma of ginger spice first, some established bretty funk, light lemony acidity making the juniper pop, some pine sap intensity, herbal bitterness against some richer malt character, and a white pepper note, cardamom is pretty subtle but a little goes a long way, and this has witbier elements to it, wheat and the coriander and a clean citrus note. slight dishwater though to me, a little phenolic thing too, curious on the ferment and not just because it has wild elements in play. the flavor starts tight and tart, but moves herbal and expansive pretty quick. more cardamom now, a white pepper note, poached pear and green apple esters, some gin character, wet musty brett, farmy, some wheat as well, somewhat metallic as it warms, citrus tang, lemongrass, earthy fresh ginger, green tea, even some hop bitterness to me late. its odd, its not amazingly well refined, but the flavors come together pretty well. a little bit of a backyard bucket thing to the ferment, but i appreciate the uniqueness at the same time. fun and different if not my favorite, ill look forward to more from these guys when i am in georgia this spring!
