Years ago, while we were planning our brewery, we felt we knew what the future of beer was. In the 2020s nobody would care about IPA anymore; beer would be all about session-strength saisons made with interesting spices!
The future has arrived! Forgotten Future is fermented with a classic French strain of saison yeast and spiced with black limes and white pepper to complement the fruity esters and spicy phenols produced by the yeast.

Hazy pale gold color. Poured a tall head that quickly dropped back to a thin skiff, leaving no lacing. Medium flow of mixed size bubbles from the bottom of the glass.
Funky scent with a pepper tang strong enough to burn nostrils. Swirling the glass kicked up a distinct lime scent, some mild florals, and a light malt.
Starts out surprisingly sweet quickly followed by a funky tart. The lime and pepper flavors pop out. The pepper flavor is very strong, but not to the level of a burn. The aftertaste is a mild bitter lime that fades to a pepper flavor.
Quickly turns into a creamy foam and then goes past it to coarse bubbles. Medium body. Leaves a slight fuzzy feel on my teeth. My mouth feels tingly long after the aftertaste has faded.
Very interesting flavor combination. This could have easily gone very wrong, but the pepper and lime are both bold and restrained enough that they balance with the typical saison tart funk. This is sweeter than a typical saison, but again this blends well with the lime and the saison funk.
