Negen is a biere de coupage, a blend of fresh and aged beers. We brewed a saison and fermented it for eight months with a mixed culture of yeast, brettanomyces and bacteria. We then blended the aged beer with a freshly brewed saison, and dry-hopped the blend with Slovenian hops before bottling. The resulting beer is tart and very dry, but also fresh and hoppy.

Cloudy yellow tan color. Poured a tall head that noisily collapsed to a thick, patchy skiff after a minute. High flow of tiny bubbles from the bottom of the glass. The bubbles rising from the center of the tulip glass look like a small tornado swirling in the middle. Left no lacing as the bubbles at the edge slide back into the glass.

Medium funk smell sitting on top of a collection of fruit ranging from apple to pear to stonefruit. Strong spice smell, like some of the stronger fruit pie spices: cinnamon, mace, powdered ginger, and a lot of others. Mild yeast. Light tart. Swirling the glass kicked up stronger cooked fruit, especially apple, with just the lightest hint of barnyard.

Light tart that gets swamped by strong and bitter fruit rind and then the fruit flesh catches up. This gets replaced with a mix of funk flavors that remind me of medical offices with a mix of antiseptics, cotton gauze, and various medications. There is something sweet all along, but it takes a while to notice it with everything else going on. This swirls through a wide range of other funk flavors. The aftertaste is a burst of fruity bitters that get more bitter for a while before fading out. Again, this really reminds me of medical office smell.

Quickly turns into a large bubbled foam. Slightly oily, tending towards gummy after a while. The foam really turned gummy after a while.

This is a blend of two vintages of Saison. This makes it something like an Oude Gueuze, however the flavor profile is much too fruity and light for that. I propose that this be called a Nieuw Gueuze. I think this could be blended with the Amber Kelderbier to round off the flavors contributions of each in a respectable attempt at an Oude Gueuze.

[ETA] Negen is Dutch/Flemish for nine. It wasn't included in the beer notes above, but the brewery had this to say:
We brewed Negen for our ninth anniversary to show what a mature, grown-up brewery we’ve become. We’re nine!
