I've had all three wits from Forbidden Root listed on BA. The two others have not been rated on BA for 6 years. Yet the softness of wheat beer, I'd think, would present lots of opportunities for their reduced-hop spicing tendencies. Not so... so far. Peach Wit also is considerably less good than the two wits I had six+ years ago. So Forbidden Root does lots of experimenting with herbs, but not so much with wheat.
I like Forbidden Root a lot; but as for their beer, less over the last 6 years... despite our similar thinking that beer should be more like it was before the 20th Century. FB was founded by a private equity guy hungry to do some good, has as counsel the Dean of Chicago Brewing (Randy Mosher) and FB does lots of "good guy stuff" for the community and the environment. And their restaurant is near the top of my revisit list, conveniently being only a mile away. For all this, I give them tremendous Overall Hugs.
As for Peach Wit, I may have it again... if I visit their restaurant. For a single line of advice, work on the yeast; it's more likely to produce the fruit medley famously made by great wits. A Sante' !

16 oz can into a tulip. Very cloudy grapefruit color with some flecks of sediment visible in the glass. Minimal head vanished immediately. More pineapple than peach aroma but both are there with some orange citrus. Peach and orange flavor with some faint chamomile. Very smooth medium body goes down easy. A refreshing wit.
