A strong dark Belgian style beer brewed with spices, this beer was designed to be a holiday seasonal ale. Which holiday is really up the beer-holder. Whether you believe Jesus is the reason for the season or you are a devout Pastafarian and worship the Flying Spaghetti Monster this brew is for you.

Originally, we were shooting for a beer in the 9-10% ABV range, but due to poor attenuation (reduction of fermentable sugars via fermentation) it only ended up at 7%. It also added a very rich texture to the beer and a residual malty sweetness.

We made a spice tea with cinnamon, star anise and grains of paradise which we added to the boil that adds a nice spice note. There is also a subdued Belgian yeast character that is lying underneath the rich malty flavor profile which includes hints of raisin, cocoa, bubble gum and of course cinnamon.

It honestly reminds me of Grandma’s fruit cake only better. So raise a toast to Ganesha, Budda, Tom Cruise or whoever floats your boat this holiday season and enjoy our Non-Denomination Ale.

CSB Grunt from the brewery. I know this didn't turn out as planned, but its not a total loss. Halfway to a Belgian dubbel, slick, slippery thick dark brown body yields a host of pit fruit aromas, molasses notes and a hint of spice. Taste follows with above flavors finishing with a ton of malt sweetness. Not too bad.

Draft at the Boise pub... Pours muddy dark walnut brown with a very short lived white head. Fruity esters... Dark dry toast with some background raisin... spices come out on the palate pretty heavily, grains of paradise and something I associate with cardamom (don't think that's it though)...pretty balanced. An overall sweetish brew accentuates the sweet spices.

This would be miles better if they let the yeast do the talking... Spiced Belgians are the worst, and this is a judicious hand with the spice cabinet, it is still overdone.

Next time make sure the yeast is taken care of and this will be a big winner.
