Clara helps keep alive a style that the French do not seem to embrace much anymore. The Biere d' Garde seems to get more love from American crafters... although they have not yet developed the style's finesse.
Now, All Rise is a really young brewer with a minimal brewhouse, and they took on the style. So should others.
Clara's maltiness is so forward, there is meal-in-itself aspect to this ale. The style traditionally is a table beer for many savory northern French foods. However, I think Clara is limited because it has minimal hops to play with the food's herbs and cleanse the palate. But, I was glad to drink Clara and participate in this under-appreciated style be more appreciated.
My first from All Rise, I give them a quick brewer review. The Cobra Lounge opened as a bar, then served pub food and eventually started brewing their own beer to improve the food experience. All Rise is a fun play on yeast. The brewpub is in a former industrial area of Chicago that is coming back. So power to them.
