We added over a hundred pounds of freshly-picked cactus pears alongside fresh lemongrass and foraged trifoliate orange zestt to our year-round spelt saison, for a beer just as beautiful in the glass as it tastes!

A: Pours a clear medium to dark golden apricot in color with moderate to heavy amounts of carbonation rising quickly from the bottom of the glass and faint rose + golden yellow + burnt orange colored highlights. The beer has a three finger tall sudsy foamy bright white head that slowly reduces to a large patch of slightly mottled very thin film covering the entire surface of the beer and a thin ring at the edges of the glass. Light amounts of lacing are observed.
S: Moderate aromas of slightly sweet prickly pear with light to moderate aromas of herbs (lemongrass), spicy saison yeast, and orange zest citrus as well as hints of floral hops. There is a light to moderate aroma of pale + wheat malts with minimal amounts of caramel sweetness.
T: Upfront there are light to moderate flavors of pale + wheat + caramel malts with minimal amounts of caramel sweetness. That is followed by moderate flavors of slightly sweet prickly pear, herbs (lemongrass), spicy saison yeast, and orange zest citrus. Finally there are light flavors of floral + spicy hops which impart a light amount of lingering bitterness.
M: Just shy of medium bodied with just shy of moderate amounts of carbonation. Soft, fluffy with a hint of dryness in the finish.
O: A fairly classic saison base with an interesting addition of prickly pear, lemongrass, and citrus zest. Easy to drink with well hidden alcohol. Enjoyable.
