Most beers contain a small of residual sugar that cannot be fermented by regular beer yeast. Brut ales utilize a special enzyme that breaks down those sugars and makes them fermentable, resulting in a beer with little to no residual sugar. We added cherry and raspberry puree during fermentation a to produce a dry, crisp, slightly tart and highly carbonated, one of a kind ale that looks and tastes similar to a sparkling brut rose wine.

16 ounce prowler into tulip glass, filled on 5/5/5019. Pours slightly hazy reddish/pinkish orange/amber color with a 1-2 finger fairly dense and fluffy light pink head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big juicy/tart/tangy cherries, raspberries, fruit skin/seeds, peach, pear, melon, red apple, wheat, cracker, white bread dough, herbal, floral, wood, grass, pepper, and yeast earthiness. Damn nice aromas with great balance and complexity of cherries, raspberries, pale/wheat malts, and moderate fruity yeast/earthy hop notes; with great strength. Taste of big juicy/tart/tangy cherries, raspberries, fruit skin/seeds, peach, pear, melon, red apple, wheat, cracker, white bread dough, herbal, floral, wood, grass, pepper, and yeast earthiness. Light-moderate herbal, floral, woody, grassy, peppery bitterness; and fruit tang/tartness on the finish. Lingering notes of tart/tangy cherries, raspberries, fruit skin/seeds, peach, pear, melon, red apple, wheat, cracker, white bread dough, herbal, floral, wood, grass, pepper, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of cherries, raspberries, pale/wheat malts, and moderate fruity yeast/earthy hop flavors; with a great malt/bitterness and tart/tangy fruit balance; with no puckering/astringent flavors after the finish. Moderately crisp/clean finishing. Moderate increasing dryness from lingering bitterness, tart/tangy fruit, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately bready/grainy, and sticky/acidic/tangy/tannic balanced mouthfeel that is great. Mild increasing warmth of 7.4% after the finish. Overall this is an excellent brut fruit beer. All around great complexity, robustness, and balance of cherries, raspberries, pale/wheat malts, and moderate fruity yeast/earthy hop flavors; very smooth, crisp, clean, and pretty refreshing to drink with the moderately bitter/tart/tangy/drying finish. Perfectly balanced between juicy fruits, pale/wheat malts, and earthy hops. Minimal residual sweetness with crisp dryness. A very enjoyable offering, and impressive style example as expected. First time I've seen the Brut enzyme not used in an IPA.
