Most beers contain a small of residual sugar that cannot be fermented by regular beer yeast. Brut ales utilize a special enzyme that breaks down those sugars and makes them fermentable, resulting in a beer with little to no residual sugar. We added blueberry and blackberry puree during fermentation a to produce a dry, crisp, slightly tart and highly carbonated, one of a kind ale.

16 ounce prowler into signature tulip glass, filled on 8/11/2019. Pours fairly hazy reddish/pinking/orange color with a 1-2 finger fairly dense and fluffy light pink head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big juicy/tart/tangy blackberry, blueberry, fruit skin/seeds, peach, pear, melon, red apple, peppercorn, wheat, cracker, and biscuit dough; with lighter notes of banana, clove, wood, herbal, floral, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of blackberry, blueberry, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop notes; with big strength. Taste of big juicy/tart/tangy blackberry, blueberry, fruit skin/seeds, peach, pear, melon, red apple, peppercorn, wheat, cracker, and biscuit dough; with lighter notes of banana, clove, wood, herbal, floral, grass, and yeast earthiness. Light-moderate herbal, floral, woody, grassy, peppery bitterness; and fruit tang/tartness on the finish. Lingering notes of tart/tangy blackberry, blueberry, fruit skin/seeds, peach, pear, melon, red apple, peppercorn, wheat, cracker, biscuit dough, banana, clove, wood, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of blackberry, blueberry, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop flavors; with a great malt/bitterness and tart/tangy fruit balance; with no puckering/astringent flavors after the finish. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering bitterness and tart/tangy fruit. Medium-plus carbonation and light-medium body; with a very smooth and moderately bready/grainy/sticky/acidic/tangy/tannic balanced mouthfeel that is great. Minimal warming alcohol for 7.4%. Overall this is an excellent brut style fruit beer. All around great complexity, robustness, and balance of blackberry, blueberry, fruity/spicy yeast, pale/wheat malts, and light-moderate earthy hop flavors; very smooth, refreshing and fairly crisp/clean to drink with the modestly bitter/spicy/tangy/drying finish. Great balance between juicy berries, American wheat yeast, and pale/wheat malts against acidity. Solid earthy hops. Minimal residual sweetness with crisp dryness. A very enjoyable offering, and impressive style example as expected. Was hoping it would be more jammy, but no complaints otherwise.
