Well, if the Kentucky bourbon industry doesn't want rye, then give the grains to local Kentucky breweries and simply wait for the song and dance that breaks out on the tastebuds. Braxton Brewing teams up with Lexington's Ethereal Brewing and Louisville's Great Flood Brewing for a farmhouse the likes that have never been tasted before.
Deep honey amber and skirting the glass with lacy foam, the beer's raw, earthy and rustic grains place a peppery and gritty zip on the nose while following with a citrusy and spicy tandem with mild wine-like tendencies. Its taste is bready sweet with bread crust, whole wheat breads and a gentle weave of winter's honey.
Militant carbonation breaks up the malts easily and allows for a quick fade of breadiness and sweetness. What follows in the malt's wake is a sharp citrusy taste of lemon, tart orange peel, and a subtle apricot and pear medley. Balancing the fruit, the peppery nature of saison leaves tracks of fresh cracked peppercorn, cumin, allspice, light must and clove on the palate that outlast the fruits easily. Softly floral to start, the hops carry a grassy, stemmy, hay-like bitterness that links up with the husken grit of rye particularly well.
Medium bodied and trending dry, peppery and pleasantly grainy, the beer's playful acidity is highlighted by the sparkling nature of champagne and brings the spicy flavors further to the forefront and allowing for deep extension in finish. Rye toast and dried citrus peels carry lasting impressions of taste into the next sip.
