Taking two classic Belgian flavors and combining them provides a fruity, spicy and robust character to the traditional farmhouse ale. Native cherries provide a strong overlay of richness and tartness that gives the base beer a tangy and estery lift.
Chill comes with a rich pink hue and a moderate haze. A frothy white cap comes swiftly and collapses soon after. A bright and lightly acidic scent is overt with cherry but with complementary fruit and spice character playing out deep within the generous fruit additions. Sweetness is pastry and cobbler-like, sharing a hint of honey and sourdough if only briefly.
Moderately rich to start, the sweetness soon drops out and allows the fruit flavors to shine. Where the cherry character is candied and tart, a wine-like presence pulls forth with the underlying beer's white grape, rose, lemon, apple and pear character plays out tepidly in the recesses. Peppery to finish, the balance of the beer comes way of white pepper, clove and vinous spice. Hints of straw-like hops act in complement as the tangy sourness springs from the beer's effervescence.
Medium bodied but trending dry, tart and quite refreshing, the beer's dryness begins to take hold as the finish nears. Its peppery, wine-like and tartness prevails as the aftertaste comes quick and shaded by the true succulence of cherries.
