this was one of my most desired casey beers, bottled in july of 2015, six years ago almost, and i am so disappointed with the fact that its way past its prime, turned super sour like a couple others we had this weekend from back in 2015, and lacks the funky uniqueness i look for and love in so many of their beers. real pale golden in color, a tad cloudy, fizzy but not holding any real head, looks alright. the nose is shockingly acetic, like a stomach acid intensity, its still fruit, even authentically and appealingly so, but the ferment is gone, its all acid and its over the top. there is still some sweetness from the fruit in the flavor too which is odd, and i get the fuzzy ripe apricot there in the center and again on the finish, but its decaying to some extent, and the acid almost cuts my teeth, burns my taste buds, and makes me sad for missing what was probably a whole lot better beer in its prime. it would be wrong to lambast this in the scores at this stage of its life, but darn i wish i could have tried it fresh. do they still make this one or not? this just did not age like i think a lot of people hoped and expected it would, and for the money i know these cost, i think there will be some pretty disappointed beer people out there, even the sour nerds might not be able to stomach much of this one. its not just that its too sour though, its also not good anymore, just too far gone, short of rotting but this is whack at this point, less than ideal...

L: Pours a slightly cloudy straw yellow with no head and no lacing on the glass.

S: Sweet apricot, some peach, maybe a touch of grape, some very nice Brett funk.

T:. Sweet apricot, some fuzzy peach, a touch dry white wine grapes, a nice slightly lemon Brett funk.

F:. Lighter bit, spritzy carbonation.

O:. Once again this is a very solid sour from Casey.

The Cut Apricot Perfection bottled 07/27/16, $36. Yellow, clear, almost no head. Looks like a white wine. I probably should have drank this earlier. There is the weirdest sweet aroma that I cannot place. There is also a pretty good apricot aroma hiding behind it. It shows up in the flavor as well and kind of weaves itself into some other notes that might be kind of pleasant if they were allowed to shine a bit more. Apple cider in the flavor, sour, definite apricot notes, kind of astringent on the tongue after it goes down. Oaky flavors too and for a brief moment reminds me of Russian River Temptation. I thought The Cut was supposed to be their take on fruited lambic but this is definitely #notlambic. Interesting beer but absolutely not worth $36.
