a really tasty saison, i liked this one a lot, partially wild with a subtle but mature brett complexion to it, and a nice dry clean vibe overall, super drinkable and effervescent as they get, so alive and fizzy, pressure builds in my mouth each time i take a sip, i love this texture in this style. its golden and fluffy headed without much sediment until the bottom. it has mellow notes of white wine, dried apricot, golden raisin, clover honey, lemongrass, and pilsener malt. i dont get a ton of wheat malt character here, and there dont appear to be a whole lot of hops to this, its really all about the yeasts and they sparkle here. the brett is funky but drying and tidy, well established, while the saison strain seems like a more interesting french type, fruity and lightly estery without being too belgian to my palate. medium body is made to feel light by all the bubbles, there is a cool farmhouse vibe to the finish, rustic somehow for how clean it is, delicious overall. my first beer from these guys, hoping to get my hands on some more of their stuff!
