a multi yeast tart saison that absolutely awesome, these guys are just killing it! one of the best funky beers i have had from these guys, which is really saying something, and its a beer i think they should keep on making, its just perfect. pale straw colored brew that appears very active in the glass. the aroma is really interesting, with a white winey french saison yeast profile hitting my nose before the brett does, but then a cool fruity brett comes right on that compliments it perfectly. its hoppy too, dry hopped i would think, with some citrus and pineapple notes to the nose and a little acidity, my mouth is watering like mad. some wonderful up front funk to the taste, i love the mix of brett and saison yeast here, its done expertly, so tidy and dry overall, but so many layers of flavor from the combination. the hops are really bright as well, citrusy and fresh tasting and not at all bitter. the malt base is simple, but with the delicate yeast going on, anything else would ruin all this wonderful nuance i think. slight citrusy acidity to the finish, tart not sour, and still refreshing. highly drinkable with all this carbonation too, and im thinking it has to be a blend of brett strains, there is a lot of wild complexity to this. this is the kind of saison i like to drink, if i had more time i would have made a day of this one alone. some of their best beer ever i reckon, i hope they keep making it for awhile!
