While the hustle of the North American hop harvest is just getting going across the Atlantic, in the UK we’re able to turn our hop buds to the southern hemisphere for a few months as the fresh 2020 harvest selections from New Zealand and Australia arrive in our cold stores.
Often, wrongly, overshadowed by the more famous US varieties and their larger acreage, there’s plenty of unique and intense flavours to be found in the Southern Hemisphere. So, for this Northern Sounds collaboration with Fingathing, we’ve put together this ‘Can of Whup Ass’, a DDH IPA to showcase the best of Australian hops.
We started with a base of extra pale barley malt backed up with large volumes of naked and flaked oats and some maltodextrin, all there to flesh out the body and bring that desirable silky mouthfeel. In the whirlpool, there’s a small US contribution in the shape of some Citra Incognito, which is partnered with a big addition of Enigma T90, the dankest of the Aussie varieties but also contributor of some prominent passion fruit notes. At the back end of fermentation came a 28g/l dry hop led by Galaxy and Vic Secret, which enhances the passion fruit aroma and brings juicy tangerine, lychee, and ripe tropical fruit. S

Pours a hazy yellow, with some unstable frothy white foam. Smells deep passion fruit, tartish, bunch of citrus of all kinds. Mouthfeel is smooth but pretty sharp carbonation. Taste is somewhat fruity, and medium bitter. Orange pith, fairly dry. Not bad.

Pours a hazy, bright orange coloration with a medium, fluffy head. Smells of light biscuity malt and citrus/tropical/berry hops, with notes of lime, passion fruit and white grape. Taste is an excellent balance of very light biscuity malt and quite fruity, juicy, slightly resinous and spicy hops, with citrus, tropical and lighter berry notes of grapefruit, lime peel, passion fruit, papaya, white grape and gooseberry, with just a hint of pine and white pepper also coming through. Finishes with a light bitterness and some lime peel, passion fruit and white grape lingering in the aftertaste. Soft mouthfeel with a medium body and carbonation.
A very nice New England IPA that is quite bright and juicy, with an expressive hoppiness and distinct notes of zesty citrus, sweet tropical and lighter, slightly acidic berry elements, as well as hints of spice and resin, with a great, soft and pillowy mouthfeel. While it's a bit too sweet for my personal taste, the pepper and pine provide a light but sharp edge in the finish here, while the sheer juiciness really is impressive here.

While it's a bit too sweet for my personal taste, the pepper and pine provide a light but sharp edge in the finish here, while the sheer juiciness really is impressive here.

Pours a hazy dark yellow with thick, fluffy head, that leaves a thick curtain of lacing on the glass. Exactly what NE IPA should look like.
Smell is juicy and a bit peppery with notes of jasmine, gooseberries and dank melon.
Taste is juicy and immensely hoppy. Notes of white pepper, citrus, melon and some floral hints. Moderate bitterness with a slight earthiness creeping in.
Mouthfeel is medium and softm but a bit over carbonated.
Overall, a very nice NE IPA that could do with a bit less bubbles.
