With the fifth release in Tom J Newell’s Patrons Project - a conceptual and literal totem pole of imperial stouts, with the cans designed to be stacked on top of each other - the summit is in sight, so we’re taking this opportunity to reflect on the series so far.
“Rejoice!” strips back all of the regalia - no adjuncts, no barrel ageing, no collaborations, just a laser focus on the bare bones of an Imperial Stout. The sum total of everything we’ve learned about the style by tinkering with the recipe over its previous four iterations, and set us up for the final ascent. Focusing on the essence of an Imperial Stout, the malt bill, we’ve introduced Black Malt to the grist, imbuing the silky smooth, treacle-toffee, milk-chocolate base with a gnarly dose of raisin, bitter, tannic dark chocolate, and the warmth of toasted tobacco.

Pours a pitch-black coloration with a medium, creamy, mocha-colored head. Smells of caramel, slightly roasted malt, chocolate, dark fruit, with notes of raisin and fig, as well as some brown sugar and hints of licorice. Taste follows the nose, with a good balance of caramel, slightly roasted malt, distinct milk choccolate and dark fruit, with notes of raisin, fig and dates, as well as some brown sugar and molasses, with hints of licorice and tobacco as well. Finishes bittersweet, with a medium sweetness and some chocolate, dark fruit, brown sugar and hints of licorice lingering in the aftertaste. Full mouthfeel with a rich body and light/medium carbonation.
Although this kinda grew on me as it warmed, it still came as a bit of a disappointment, especially after the label description, with it being quite a bit more sweet and not roasted and bitter enough for the expectations it was building up to me. While there are hints of licorice, tobacco and roasted malts to this, these are not quite prominent enough to balance out the sweeter milk chocolate, dark fruit and brown sugar notes here, with this particularly lacking in bitterness. With the prominence of the pastry stout style, it feels like proper, roasted and bitter stouts are becoming harder and harder to come by, which is a real worry for me right now. Another half-way-drainpour, I just cannot stand these sugary sweet stouts lacking in bitterness and roasted malts anymore.
