Taking a trip to the northern Yorkshire dales for a distinctly Yorkshire winter warmer; parkin. A traditional ginger cake full of rich oatmeal, molasses, and warming spices that makes it the perfect candidate for recreating in dark beer form.

Browner malts like Special B and Munich give this beer a rich brown colour and caramel & dark-fruit notes rather than the dark chocolate and coffee bittersweetness of darker porters, while Rye and Oats recreate the chewy, sticky, mouth-coating texture of Yorkshire Parkin.

Finally, Parkin’s lingering impression is one of earthy heat from stem ginger which we added towards the end of the brew, along with a touch of vanilla flavour to recreate a generous drizzle of custard and make this a proper pud.

Pours a deep, dark mahogany brown coloration with a reddish sheen when held up to the light and a large, creamy head. Smell is dominated by vanilla custard, with some caramel malt, and hints of chocolate and spice also coming through. Taste is a great balance of light caramel malt, a distinct vanilla custard note, some chocolate and dark fruit, with hints of raisin and fig, as well as accents of warming spice coming through in the aftertaste, with notes of ginger, licorice, black pepper and nutmeg. Finishes bittersweet, with a light bitterness and some custard and spice lingering in the aftertaste. Full mouthfeel with a medium body and carbonation.

This makes for quite an interesting brew with a great balance of sweet and spicy notes, and although that vanilla custard character feels just a tad overdone and artificial here, it's really not that bad, being balanced very well by the warming spice, with the ginger just fitting in perfectly, pleasantly lingering on the tongue in the aftertaste without feeling overwhelming, while the rye malt adds some peppery spice and nutmeg as well.
