"Milk Stout is a traditional member of the "Sweet" family of Stout styles. It derives its name from additions of lactose (milk sugar) to the beer. Lactose is not fermentable by brewer's yeast and thus it leaves additional carbohydrates and calories in the finished beer. This enhances the mouthfeel and the perception of sweetness in the style. In addition, high mashing temperatures further reduce attenuation lending a wonderful viscous character to this midnight black libation. In a creative twist made possible by our friends at Serizawa Saketen, we add a generous portion of freshly picked and pureed Shizuoka Strawberries to the kettle at the end of wort boiling. This lends a wonderfully tart and piquant berry underbelly to an otherwise rich and roasty brew. Available in very limited quantity in kegs and take-out bottles from the Taproom (as well as bottles sold through Serizawa Saketen).
