Bright golden color with a huge mushroom head that filled the whole cup with eternal retention and leaving goods laces.
Nice randomly funky fruity aroma with notes of caju, oranges, pineapple and cantaloupe melon.
Interesting flavor with clear notes of caju, mango, orange-lemon, white pepper, piney and herbal hops, soap, some Bretta and Saison yeast. Dry aftertaste with a medium bitterness.
Medium body with abundant effervescent carbonation (It could be a tad lower). Alcohol of 6.8% is completely absent.
Great flavor, lots of phenols and well hopped, that married perfectly with the caju and mango that were not overdone. Bretta played a minor role, which I believe was the proposal. One of the best local Fruit Saison I had, highly recommended. Don’t expect a kick-ass funky Saison.

After so many months away from this beer review thing, I just ought write a review for this one I have in hands.
Saison de Cajú is a brazilian saison made with cashew and mango - what an awesome idea!
It pours a golden body, with tones of ocher. Foam is white, not too much persistant, but leaves a nice lace. It's also extremely turbid due to the fruits added.
Smell is complex, spicy as a saison should be with notes of pepper and coriander; fruitness is huge, but is not easy to distinguish between notes - some cashew of course, and some citrus. There's also a bit of honey sweetness - really good.
Taste is also complex. Fruity character takes the first place and orange/lime peel notes appear, as well as some peach notes in the bitter end. Mango notes are subtle.
Body is not huge, but carbonation is and there's also a nice crispy feel.
Great!

Jumping the boarder, Stillwater brewers extend their collaborative hand to the Tupiniquim beer makers of Brazil to create a Saison that bridges the taste of both worlds.
Yet, a Belgian tone is set with a highly exuberant pour the erupts up the glass on the most patient of pours. Its billowing cream head is lathery and mousse-like, lacing and shedding bold aromas along the way. mango, papaya, melon and weathered citrus all pave the way with and under current of powdered sugar and grain sweetness laying low in subtle support.
But with the sweet and fruity middle simply glowing through the duration of taste, the middle palate calmly fades in order to favor a spicy and peppery taste over that of tropical, citrus and orchard varieties. Trending with peppercorn, fresh grated white pepper and tepid capsaicin lingering; the finish promises a quick closure.
Medium-light and trending drier and drier, the beer's texture is greatly aided by its vast champagne-like carbonation. It highlights the beer's peppery qualities and sells its dry texture greatly, yet those fruit and sweet components extend deep into aftertaste as well.

A saison with peppers and mango pulp? Well, I'm willing to experiment. Bonus points for coming out of Brazil (valeu Zize!). Out of a stubby 310 ml bottle, on to the beer:
An airy soapy head emerges on top while beneath is a color which looks like washed out blonde. Head retention on top is good, leaves spots of lace around. Smell...see, I told you this would be fun. That tart lemon aroma hits first, then comes a soft wave of sweet peppers and a note of mango. Not too funky, although it is brewed with brettanomyces. Saison de Caju tastes different from its aroma. It tastes more medicinal and spicy, while featuring less funk. That being said, it's a soft wave of spice, and along comes a light note of mango.
Not a bad effort, but I still prefer Lost In Translation IPA Brett. At least this saison comes out different.

Sunny in color, effervescent, bone white head. Earthy aroma, spices, with a sweet fruit nose. The cashew fruit lends a sweet taste, with an earthy Belgian yeast edge. A bit sweeter for a saison. Dry, crisp, drinks easily.
