Thanks to Jeff for this one. 750ml capped bottle into a Surly teku. Shared with schen9303.
Nose is yeast, lacto tartness, lemon, hay, cobwebs and foam. Light, crisp and vinous. Notes of white grape, peppercorn, yeast and coriander. Bright with some lemon and citrus tartness at the end. This one's nice with good complexity. Really drinkable. Light bodied with ample carbonation. Prickly on the tongue and goes down foamy, dry and puckering. Excellent!
A real impressive beer! I'm looking forward to more of the same from Fair State!

i feel like this one needs a year in the bottle, the brett and funk arent developed enough for the other flavors in it, but i think its still a real success, i just wish i got a bottle for the cellar too, pricey as this is. nice to see these guys getting wild and experimental, but this might be a tad premature. i get the oak, plenty of brett and wheat malt, a little more of the tangy white grape than i need, and lots of pale rye malt, which really makes this i think. the balance between them all is really good when it warms up a little, the fruit is being actively digested by the wild yeasts, and although its progress hanst advanced to the ideal state, its on its way, and the sweet and tang from the fruit is good here. the rye spice balances it well, and thats the boldest aspect. the beer is real pale yellow, hazy almost creamy looking, like melted butter, with a good head of white bubbles on top but they go away pretty fast. the nose and taste are identical, white wine, young fruity brett, light honeydew melon, some citrusy dry hopping perhaps, and a nice rustic grain base that is quite unique when taken all in combination. cant wait to go back up here, this is good enough to make me eager to pay 20 bucks a bottle for their other wild beers. surprised others have not commented on this one yet, maybe they know to wait awhile on it...
