Aroma and taste are really exactly the same to me here: lemon tartness, crackery malts, hay, apple, peppery noble hops and a light funkiness. It really tastes like a sour, funked up Pilsner. Very easy to drink and exceedingly refreshing. I would prefer a titch more Brett, but that is nitpicking.

i have been pretty stoked on the fair state wild stuff, and this might be the best of the lot so far. its sort of a pils type, simple and light but bready and flavorful in terms of its grain base. more brett here than bacteria too from how it smells and tastes, more funk and less sour than their others that i have had. i smell limes and green apples, but i dont think this one has fruit in it. lots of wet hay, straw, farmy funk, thats the brett, and its great. there is a citric tang to it, but it stops short of being super sour. much cleaner than the other wild beers i have had from these guys, less mushy and huge too, more delicate, i like the simple grain base in that context, makes a lot of sense. great carbonation and dryness in the mouthfeel, that really makes it for me. even hoppy in the finish a little bit with the funk. cool to see a little upstart brewery like this turning out such high quality wild beer, they are on their way for sure. have not seen this in bottles yet, but i reckon it would age nicely, let some more wildness develop. very intriguing and delicious beer. well done again by these folks!
