Tasting Notes: Dark Chocolate - Rich Toffee – Old Stock Bourbon
We took one of our favorite variants of our Sleepy Bear series and aged it in a blend of Weller and Buffalo Trace Mash #1 barrels for 12 – 16 months. Loaded with roasted cacao nibs, vanilla, caramel and flaked Maldon sea salt this beer is what Chocolatiers dream about. This is one hell of a rich decadent dessert beer that is meant to be enjoyed in great company.

Local beer and local barrel aged beers are always a draw. I want to take advantage of the great selection that surrounds the greater Chicagoland area. My first Werk Force beer is Sleepy Bear, salted caramel variant. There were a few others to choose from but I liked the idea here. It is a very dark bourbon flavor with a thin ribbon of slated caramel. It starts off bold but gets a bit astringent after a while. I just saw they released this year’s batch so I’m going to check them out again if I see it in stores.

16 ounce can into a snifter. A 2021 release, had 2/26/21.
Pours near black and opaque, with a quarter inch foamy head and light foamy cling. Aromas of caramel, vanilla, chocolate, malt, some bourbon. Pretty much the same flavors- caramel, vanilla, bourbon, chocolate, malt, light sea salt as it warms. Smooth, a very good full body, well carbonated.
All the add- ins show well, but those wonderful barrels they used could be a little more prominent. It’s fairly straightforward, but well executed. Lots of chocolate and caramel. Very enjoyable.
