Mixed culture saison aged in French oak wine barrels and puncheons, then rested on tangerine and peach puree. Pours a light golden-orange, unfiltered, with a full finger of head and some residual lacing. Bright citrus and chardonnay grapes on the nose, tilted towards tart acidity thanks to the bacteria and ageing. Only subtly tart on the tongue, however, very well balanced by the base farmhouse notes of straw, biscuit, and Meyer lemon. Fairly dry, with prominent minerality and oak character on the palate. Excellent.
