This is the third iteration of the Wilderness Gothic series of barrel-fermented beers featuring locally-sourced grape juice supplied by our friends and partners, Vicki Samaras and Jonas Newman at Hinterland Wine in Hillier, ON.

We added fresh Vidal juice from Hinterland Winery in Prince Edward County to a barrel-fermented Saison to produce a straw-coloured, dry and richly complex Saison with subtle acidity and notes of honey, white grape, pithy grapefruit and lemon.

At my lady Pamela's house; bottled, from Craft Heads' bottle shop, purchased August 2024. My second time having this incredible beer, but first time for 2025. Highly recommended. Easily one of the best beers I have ever had, period.

Bottle: Poured a yellow color ale with a large foamy head with OK retention and light lacing. Aroma of tart notes with some vinous notes and funky ester. Taste is also a mix of tart notes with some vinous notes, some oak and some funky ester. Body is about average for style with good carbonation. Enjoyable wine focused saison with good balance.
