Imperial Stout made with chocolate, hazelnut, & waffle. Inspired by our trip to Belgium in 2019.

Pouring a cellar temp bottle into my snifter. The beer was bottled on 4/22/2021 and has been in my cellar since I picked it up at the brewery in October of 2021.
The beer pours a dark black coffee color with a fluffy tan head of 3.5 cm foaming up. I cant get the whole bottle in the glass on the first pour. This head fades fairly quickly to a sturdy edge layer while I take the photo.
The aroma is a big hit of hazelnut and a little caramel and chocolate. RIch fudge dominates with just a little booziness coming through. NO hop profile on the aroma.
The first sip reveals a soft texture and very fine carbonation. Body is medium and the beer has a bit of a rich coating on my palate.
Flavor doesnt have the hazelnut that the nose kicks off and is mostly fudge and dark chocolate. The finish allows a little roasted malt notes as well. Some sweetness here, but not a lot.
I really like the nose as the best feature of this beer. The rest is fine, but the nose steals the show here.

Pours almost muddy. Hazy imperial stout? Oily slick legs, nearly no lace or head. Nose is burnt caramel, molasses, pork sung, bacon, syrup, and chocolate. Strange. Smokey, meaty. Not bad, just weird. Beer opens maple syrup, a touch of salted caramel, and roast. Chocolate, molasses, and smoke in the middle. Salted caramel in the back and towards the end. Roasted malt and cocoa powder at the finish. This one kind of grows on you. Body is full with moderate to low carbonation. Prickly but somehow filmy on the palate and goes down coarse. Messy finish with a lingering aftertaste.
The taste here kind of grows on you but everything else here isn't very good.

Hazelnut is at first the prominent note, along with a syrupy sweetness, until: CHOCOLATE. Just a huge wave of chocolate. I really am reminded of chocolate sauce, syrup, and hazelnut sauce on waffles. Delicious.
