Imperial Stout aged in Phifer Pavitt Cabernet finished Bourbon barrels for 11 months and 25 days.

Sampling a cellar temp 500 ml bottle poured into my snifter. Bottle # 502 /650 and bottled on 1/26/2022.
The beer pours a black coffee color into my glass. A minimal tan fizzy head of .5 cm foams up and fades to a sturdy edge layer soon after I finish pouring the beer.
Aroma on this one is fudge brownie, some brown sugar, a bit of sweet bourbon. No hop character and no peppery or fusol booze. Pretty well hidden ABV on this one.
First sip reveals a medium body and very fine carbonation that gently rolls across my palate. Texture is a little sticky and does leave some coating on my lips.
Flavor is similar to the nose with dark fudge brownie and sweeter bourbon notes. Where is the red wine finish impact? I dont get any red grape, acidic notes etc, that I would expect from a merlot or similar wine.
Some warming booze does show up on the finish and it lingers a bit after each swallow. This is a tasty Bourbon barreled aged imperial stout. But I dont place it in the top tier for Barreled Souls.
