Our classic imperial stout, Dark Matter, aged in barrels for 11 months and 15 days that first held Prisoner Red Wine, then finished with Bardstown Bourbon.

Pouring a cellar temp 500 ml bottle into my snifter. bottling date is 3/31/2022, so its been in my cellar for a bit, but hasant ever been warm.
The beer pours a dark cola brown and sits slightly darker in my glass. A fluffy tan head of 3 cm foams up and almost overtops my glass. This foam fades to a sturdy surface covering that sticks around for the entire sampling. Also leaves dense creamy lattice when I swirl the glass or take a sip.
Aroma is dark chocolate, fudge, some red grape and tannin plus a little wood. The dark malt notes are much stronger and there isnt any hop character nor any hint of the booze here. Not as vinous as I expected this beer to be.
First sip reveals a medium body and smooth texture with fairly soft , yet present carbonation.
Flavor is lots of chocolate and fudge up front, I get some dark fruit , red grape for sure in the middle and some sweet vanilla and bourbon come through on the finish. Never any hop character and the booze is also well hidden.
Overall this is a tasty beer with lots of dark malts, very little booze and easy drinking physical traits. Im enjoying it.
