Sampling a cellar temp 500 ml bottle poured into my snifter. Beer was bottled on 09/12/2023 and I picked it up at the brewery last fall (Oct 2023). Bottle has been in my cellar since I picked it up and I have 2 more chilling out down there.
This beer pours a rich dark coffee color and no light is passing through my glass.
A fizzy tan head foams up less than 0.5cm and fades to only a thin edge layer. There is quite a lot of activity on the surface, but these very fine bubbles do not replenish the edging in any significant manner.
Aroma on this beer is fairly robust and unsurprisingly features a good dose of bourbon as this beer was aged for 33 months in two different bourbon barrels!
I get a little charred wood and some vanilla and dark chocolate, some rich bourbon notes for sure and some fusol booziness. Also not surprising for 18.4% ABV! no hop character to be found.
First sip reveals a soft textured smooth beer with very fine and gentle to almost cask like carbonation. I get some tingly sensation if I let the beer sit on my palate, but I think that is from booze not carbonation.
Flavor is some dark chocolate, a bit of molasses and brown sugar. This rolls to some rich bourbon note, not really sweet and Im not getting vanilla here. A little bit of wooden hint here too, char in a mild note. The bourbon for sure is dominant, but is also not overly sweet and there is no hop character to be found.
There is some solid warming booze on the finish and this is a sipping beer IMO. Very nice brew that the barrel aging showcases nicely. This is a top tier Barreled Souls beer,and if you know, that says a lot about this one!
