In this second version of Tonka (aged in Old Elk wheated bourbon for a year), we added almonds, Tahitian vanilla and salted caramel to really embrace the notes the barrel was already giving us. The addition of adjuncts not only ramped up the subtle notes that were already there, it brought some additional sweetness and body to the beer transforming it into more of a pastry-style stout. The question of which is better is totally up to you to decide.

Poured at fridge temp. Pours a nice thick black with a thin layer of brown head. The nose is fantastic. All of the advertised adjuncts come through. Almonds, vanilla, and caramel. Can't really tell that it's salted caramel though. Bourbon and chocolate also come through. I love the nose on this one.

The taste is bloody awesome. Vanilla is strong on this, along with caramel, chocolate, light raisin, dark malts, and a note of fresh cake batter. The almonds are there, but not really a significant factor on the taste.

The mouthfeel is thick and creamy. The ABV is very well hidden. What a lovely beer!

This one pours a fairly dark black color, with a small head, and not much lacing.

This smells like milk chocolate, oak, caramel, vanilla, toffee, and roasted malt.

This is really quite fudgy and pastry-adjacent. It’s definitely sweeter than Barreled Souls is usually known for, but still not overwhelmingly sludgy, like so many stouts these days. There’s a really nice salted caramel note here, with not that much almond, but a nice moderately sweet vanilla note. There’s some nice oaky spice here, and a nice mild bourbon note.

This is medium bodied, very creamy, and pretty velvety, with a nice drinkability.

This really was pretty nice, but it’s good in smaller amounts for sure.
