Named after a family member’s grandfather, Freddie Fitzgerald, this Belgian stout can be the life of any party. With a crisp and clean finish, Fitz gives you the all sweet, malty flavors of a traditional stout without weighing your palate down. Belgian ale yeast provides that extra funk, making the beer as lively as an Irishman on Saint Paddy’s Day.

a cool stout here, my first from persimmon hollow, a rich and interesting one, fermented with a cool belgian yeast strain, making it quite a bit different than most of what else is out there in the style. i have liked this combination in the past, and wonder why more brewers dont give it a try, as there are some natural synergies to be explored. this has a really nice pour, inky dark brown molasses colored with an almost nitro looking head, really decadent and shiny looking. aroma is lightly astringent, with some cool esters from the belgian yeast and a lot of dark roast. there is also that dark candy sugar character, not that its overly sweet or anything, but that component seems to be here like you might find in a quad or something. the flavor has a little tang to it which i think highlights the belgian yeast and cuts some of the body, maybe unintentional, but i dont dislike it. i also really like the dark fruitiness, booze soaked raisin and plum or prune, licorice there too, tobacco, winter spices, red wine tannins, and perhaps some light funk as the name suggests. fuller bodied but not heavy, warming but not boozy, and really interesting with the fermentation profile so forward in a style that usually doesnt showcase it much. higher carbonation for what it is too. the tartness is a little weird, it seems to pull some smoke out of the malt, but overall this is a really cool beer, different from the masses, and has me intrigued about persimmon hollow. nice with some aged cheese and cured meats!

Poured a black body with minimal head and lace patch.
Not a bad beer at all, in fact, pretty good, although this felt much more like a stout or porter than your typical Belgian dark ale.
Had a malty aroma of mainly roasted and sweet malts like bitter chocolate.
Smooth, medium bodied beer, slightly chewey, has a dry feel to it that is balanced with chocolate notes and finishes easy and dry (yeast typically found in a Belgian helps keep it smooth and fluffy).
A simple but pleasing beer.
