i keep getting excited to drink the beer for some occasion and then not doing it. it was going to be my last beer before a sober month, then my first beer back after it, then i finally decided to just open it randomly, these guys are becoming one of my favorites, and i couldnt wait for another reason to drink it, so i just drank it, unceremoniously to my head. its a lovely beer, super lively from the bottle, even pushes up some yeasty foam after a glass is poured, a bottle to keep an eye on. good clarity for the first little bit, then hazy bit still bright, then downright sludgy toward the bottom, but with a big airy head all the while. a yellow tone to it, pretty beer at all stages. aroma and flavor show a nice mature brett profile, a little bit of a french type saison ester, and some white wine character as well, farmy and musty and rustic but dry and fast finishing too, a little tart but not really very bacterial to me. notes of cracked white and black pepper, preserved lemon, green tea, fruity white wine, and really unique yeasty funk, doughy and raw as well, hearty but simple on the grain side too, i love everything about it. it warms up well, has a pretty distinct brett presence, and has been nicely conditioned in the bottle, effervescent and dry. great bottle of beer, i wish these were cheaper, i would load up, but i am thankful for this one. usually i love to share beer, but sometimes its nice to be a little selfish and indulge in a bottle like this. highly recommended this one!

Poured into a Gulden Draak tulip. Pours a medium golden amber with a half finger white head that dissipates to a thin film with light lacing. Aroma of grainy malt, light apple, brett and saison yeast. Flavor is light grainy malt, diluted apple juice, brett and wild yeast, lightly tart. Light to medium bodied. The malt body in this saison is rather light, but appropriate. Moderate brett and other wild yeast funkiness and mild fruit flavors. Although it is nicely made, I enjoyed last years Grisette, which had more robust graininess and less tartness. Not my style of saison, sadly.
