This Pale Ale is dry-hopped with Simcoe. Pours a clear golden yellow with sticky, long-lasting foam in the Dogfish Head IPA glass. I’m thinking of citron in the aroma with a whiff of pear. Fairly dry with a hint of resins. Toast and a touch of lime.
Mellow and melony with a modest bitter finish. Cereal taste is quite pleasant with the aromatic overtones. I like this idea of Pale Ales single hopped with restraint. This one is a great showcase for the hop, letting the flavors show their complexity. From the 32 oz growler purchased at the brewery tasting room.
