This area is known for it's legendary fly fishing. The Beaverkill River is the heart of it all. On that river are many well known spots and one of the best is Cemetery Pool. This place is a release section of the river where it's not legal to keep fish - they must be released unharmed. Our spring flurry of special releases ends with this great beer, our Cemetery Pool. This beer is the living DNA of Catskill Brewery - a saison brewed with NY state ingredients. It has great character - a dry spiciness and some real stature with a 7.1% ABV.

My second beer from Catskill - again a fairly run-of-the-mill saison - mild fruits and gentle herbs and grains - medium-light feel, moderate carbonation - hits most saison marks, but doesn't set itself apart from the crowd...

A: The beer is slightly hazy and a bit pale yellow in color with a light amount of visible carbonation. It poured with a short white head that quickly died down, leaving only a narrow collar around the edge of the glass.
S: Moderate aromas of Belgian and fruity yeast are present in the nose.
T: The taste follows the smell and is mostly dominated by yeast-like flavors along with underlying hints of biscuit and grainy malts.
M: It feels nearly medium-bodied on the palate and has a moderate amount of carbonation.
O: This beer is a bit heavier in body and doesn't have the dry mouthfeel compared to other beers in the style - it seems to be a little more "rustic" in this aspect.
