Lévrier is a saison-based riff on a Greyhound cocktail (which also inspired the name since Lévrier means “Greyhound” in French). One of our foeder saisons is very grapefruit and citrus peel-forward, so to this base beer, we added a small amount of stone fruit (a blend of peaches, apricots, and plums) to amplify the sweet and crisp fruit flavors, as well as a liberal dry-hopping of Galaxy. The resulting beer is hazy from the large hop addition, tart like grapefruit juice, and very refreshing. We won’t blame you if you crack one open at brunch!

750ml green bottle. No dating information found.
Cloudy, pale gold colored body. Brief one finger of white head, which results in a bubble fed thin cap. No lacing. Good amount of dregs from the final pour.
Aroma is big with peach, apricot, and plum stone fruit. Also has a definite leather and tobacco funk going on.
Taste is tart (like grapefruit) but also a bit sweet from the stone fruit (notes of peach and apricot). Cocktail like, instead of bringing in the funk from the aroma. Dry and crisp in the aftertaste.
Medium mouth feel, with some effervescence. Good carbonation.
Terrific blend of grapefruit and stone fruit. Alcohol is well hidden. Interesting to get a grapefruit flavor from a saison.

Medium orange body, slight brown hue. Smell is massive stonefruit. Wow. The apricot, peach and plums come together to create a massive stonefruit nose. The galaxy is hidden on the nose but comes through as soon as you taste it. It's very heavily dry hopped, and gives off a big leafy, slightly spicy backend that isn't bitter. It clashes a bit with the tart saison and all the stonefruit, but it does cut down the acidity a fair bit. Medium bodied, good carbonation, a bit prickly and fairly heavy on the lactate.
