Typically when we dry-hop beers, we are looking to select varieties that we are able to get in as fresh as possible. For this beer we decided to do things a bit differently. Anyone who has visited the brewery in the last year may have noticed the burlap bags hanging from our rafters that contain aged whole-leaf hops, to be precise, Hallertau from the 2014 harvest. These hops are the same ones that we use in wort production for our Methode Traditionnelle beers, but we have never experimented with them post-fermentation…until now! We selected a base beer that is far more saccharomyces forward than our other Foeder Saisons in the series, and dry-hopped it over a few days with a portion of the aged whole-leaf hops before packaging.

Cellared for a year. Murky darker yellow body with two finger of tight bubble head. Smell features the oak and funk supporting citrus and a dash of grass and hay. Taste adds some pineapple, otherwise the same, lemon is particularly big. Reminds me a lot of afterthought's dry hopped saisons. Tartness is solid, acidity is complimentary, bright and oak backed feel.
