This addition to our Foeder Saison series is comprised of a base blend of mixed-culture saisons that were fermented in our French Oak foeders. This blend was then re-fermented on 3 pounds per gallon of apricots and then dry-hopped with Rakau.

Cellared 2 years. I know this take will come in red hot, and I know they are different styles, but I found this to be a poor man’s fou foune. Musty and barnyard funk, apricot with bright acidity, hint of grass, minerality with hay in finish, both in smell and taste. Taste open up the funk depth and fruit interaction just a tick more than the nose though. Body is light and smooth with good sourness and playful acidity, elevates with a dry brightness, funk is pervasive with a light yeast presence with plenty of vibrant oak backing.

750ml bottle. Label has this as 'VINTAGE 2020'.
Cloudy, straw colored body. Some white and black tiny particles of sediment. Thin one finger off white head. Displays a few spots of lacing as the body is drunk.
Aroma of oak barrel, leather and horse blanket funk, and apricot fruit.
Taste is a slam of tart barrel aged saison, with apricot stone fruit emphasis. Sweet and sour at the beginning but overall tart. Funk has depth that expresses leather, horse blanket, and grassy notes. Apricot intertwines among it all. Aftertaste goes dry, but all flavors jell together in a quick review.
Medium mouth feel. Dry and tart but not to the point of being an enamel scraper. Dry finish. Good carbonation.
Very tasty barrel aged saison, with active yeast. Apricot is the main flavor addition. The flavoring flora abounds. Rakau hops amplify the tart expression and stone fruit flavors
