Interesting project to match specific acclaimed recipes to beer. This one is using Brazilian yeast taken from passion fruit and sugar cane.
Amber yellowish color with practically no head.
Aroma with predominant notes of pineapple, sugar cane, peaches, mothballs and oranges.
Flavor with notes of pine, chamomile, lots of cloves, lemon, pineapple juice, sugar cane and orange. Slow dry aftertaste with a medium bitterness.
Light to medium body with low carbonation. Hard to believe this is 6.8% abv.
Juicy and piney Saison. It feels it could be more attenuated, luckily it had enough hops to partially counterbalance its sweetness. I found very interesting that the yeast taken from passion fruit and sugar cane led to a Saison taste.
