Pours out a thick, viscous dark brown nearing black. Even on a hard pour, no foam.

Nose is huge oak and bourbon profile. This smells like it was dumped in moist barrels. Cinnamon underneath, with the roasted malt as well.

Taste is an explosion of the bourbon barrel, cinnamon, or cassia in this case, big chocolate and roasted malt. The bourbon and oak influence is almost smoky and the combination of it and the chocolate brings an almost savory flavor. The cassia melds with the peppers to bring a substantial heat. Having had this flavor combination many times, it doesn't always work well, but here it does so exceptionally.

Mouthfeel is thick and dense. I could tell from the pour that it would be this way. Its almost chewy. Very minimal carbonation. ABV and peppers make it rather drying and the heat balances out against the cloying sweetness.

Overall a killer brew. The bourbon barrel aged spicy cinnamon stout is an archetype I always enjoy, especially when its done this well.

Drinking a 2022, 14 percent abv, 10 year Woodford Barrels. Pours dark, thick appearance, no head or lacing. Nose is chocolate, wooden whiskey barrel, the cassia wood, hints of maple. Taste is a well blended mix of sweet and spicy, chocolate and peppers, whiskey undertones. Thick, syrupy, big bodied, boozy and pleasantly hot. Pretty darn good

22oz bottle at the 2017 RIS tasting, thanks to Steve. poor planning on my part, but these last few have all had the breakfast/cinnamon roll spin going on, making it hard to discern one from the other. Not a bad thing, and this one was pretty good and delicious, but I can’t add much more than to say black pour, beige head, boozy aroma, roast malts, cinnamon, vanilla.

Pours a pitch black coloration with a small, creamy, mocha-colored head that quickly dissipates. Smells of caramel, slightly roasted malts and rich dark chocolate, with a strong cinnamon aroma and hints bourbon, dark fruits, vanilla, chiles and earthy oak tannins, as well as a certain sharp booze note. Taste follows the nose, being dominated by slightly roasted, caramel malts, rich dark chocolate and cinnamon, as well as ligher notes of dark fruits: plum, raisins, bourbon, earthy oak tannins and a light sherry-like oxidation note, as well as hints of vanilla and chiles. Finishes rather sweet, with a light bitterness and some dark fruits and earthy cinnamon lingering in the aftertaste, as well as some more chile heat coming through. Full mouthfeel with a rich body and light carbonation.

This is quite a rich and complex stout, but just too much on the sweet and boozy side for my personal taste, with the strong cinnamon and slight cherry notes not really helping to balance things out here. It does have a certain earthy quality to it though that helps keeping things grounded, as well as a light, roasted bitterness at least. Still quite boozy after roughly 2 years as well. I actually drain-poured the last quarter of this because it was just way too sweet and boozy to finish in one session for my personal taste, your mileage may vary.

Good sweetness in the stout. Tastes of chocolate and some cinnamon. No bitterness whatsoever in this. Good mouthfeel, light head. Sweet smell. Great taste.
