-Aged in French Sauvinon Blanc Barrels. 750 C&C obtained from brewery. Brewed with Saison Dupont yeast obtained directly from source brewery.
A: Dark orange coloring, a bit of a haze factor, translucent character with a fluffy white head sitting steadily atop of good size. Carbonation is light to medium in density, moving at a rapid pace, while the glass is covered with a milky white coating of generous proportions.
S: Sweet and fruity aroma, grapes and wet pear. Soft fresh hay, and barnyard muskiness is very soothing, lightly tart, dry. Some light sour cantaloupe and touches of sour peach. You can definitely tell the influence of the Saison Dupont yeast, the gold standard per style.
T: Flavor was tart fruit, apricot, peach and cantaloupe are forefront and in good proportions. High fruitiness factor, some musky barnyard, hay and musky grains. Tart tropical notes of pineapple-orange brings in a little zing, along with some guava and grapefruit peel adding a dry tartness to the overall effect. Warming fruit alcohol and twang along with some dry white grapes from the influence of the Blanc barrels.
M: Soft and luxurious on the tongue, dry ant tart feeling.
O: Overall what can I say, when you use the Saison Dupont yeast,( and as everyone knows the yeast makes the beer, the brewer only the wort), you already are off to a great start as long as you take care of the fermentation process. There is a reason Saison Dupont is the gold standard per style. Most if not all the fruity, tart character is derived from this making a flavorful beer that was dry, crisp and rewarding experience. The hard part was already done for them. The yeast I was told came directly from Saison Dupont during the brewer's visit there. This was the selling point of me choosing this over the other bombers.
