Our stock ale is brewed and aged in the tradition of the great English and American barleywines brewed with floor-malted Maris Otter, Munich, and a blend of Crystal malts, and hopped with Amarillo and Centennial. Deadfall was fermented with our house ale strain and then aged for six months in a Westland whiskey barrel which had previously held American bourbon. The barrel character is more akin to scotch than American whiskey, and the extended aging has enhanced the malt, hop, and yeast characters without overwhelming them. The fruity yeast and hops meld with the sweet malt character and notes of vanilla spice, and citrus of the cask, creating a complex array of caramel and bruleed sugar flavors, with an aroma of candied oranges.

500 mL bottle. Deep brown and murky. Smells of oak, heavy earthy and nutty malts, peat. Tastes of peat, lots of oak, some oxidation, though it works here. Medium body. Tasty and very different. The oxidation works and it's an enjoyable deviation.

Appearance - The beer was brown is color with little noted carbonation or head.
Smell - The grains and barrel notes were most apparent. It was mellow like the style.
Taste - At the front were notes of fruit leather, oak, bourbon barrel, and just a bit of heat. The diverse flavor profile brought to mind a barleywine that has been allowed to sleep in barrels for a long time. The heat lingered, but it did not take away from the experience.
Mouthfeel - With little carbonation and oak, this was smooth. I wished the body had more staying power.
Overall - This was a tremendously enjoyable old ale.

Had on tap and aged 2 years. Opaque super cloudy brown body with a light brown head. Whiskey with a touch of peated earth serves as the base from which gooey caramel, strong toffee, raisin, date, dark wood, big vanillins, and barley exude themselves. Taste adds flavors of tobacco, creme brulee, hint of maple, molasses, and the finish has a satisfying barley bite. Feel is heavy, chewy, and full with significant barley, oak, and booze influences. Wonderful stock ale, would roll out for the holidays if I had a bottle

Aged for a year in the bottle. Appearance is a dark brown with a slight tan head that dissipates quickly. At a is a mild malt standard barleywine. Taste is a smooth standard barleywine. A little thin.

Pours a murky dark brown. Kind of raisin coloured with a tan head that remains in a tight fuzz. Decent lacing.
Nose is rich and sweet with honeyed raisins and chocolate and a light bourbon. Some light hopping is apparent, but takes a back seat to the rich sweet malts. A bit of fig around the corners and maybe some tobacco. I love barleywines. I love old ales. This is kind of in between.
Rich sweet deep malts and then a big burst of juicy citrusy hops. Chocolate is more prevalent here, along with more of that armchair tobacco and leather and toffee/caramel and raisin and all that. But the chocolate and the rich citrus hops step forward as compared to the nose. This is really tasty, but still pretty sharp. It's delicious now, I can't wait to see how the bottle I stuck in a dark place ages in the coming years because I think this could turn out to be one of my absolute favourites. Setting the bar high, I know.

This is really unique and really tasty, with an intriguing fruitiness and citrus character that I wouldn't expect. There's candied orange and orange marmalade, and a flavor that's super reminiscent of an orange peel that's absolutely soaked up all of the bottom of a bourbon cocktail. There's also just waves of malty richness- caramel, toffee, and chocolate. It reminds you that this is a strong ale, or a barleywine, or a stock ale- which is what it is actually called.
This is thick and chewy, with a decent level of drinkability. Despite this, it's something you sip slowly, as it becomes slightly boozier.
