Sortition is a barrel fermented saison brewed with pilsner malt, wheat, oats and rye. Hopped with experimental HBC 342 and strisselspalt, Sortition was fermented with a house culture of Brett and Lacto in oak puncheons where it continued to age for 4 months. It was then dry-hopped with more HBC 342.

I had this beer on-tap in a tulip at Herb & Bitter in Seattle.

Appearance: light yellow hue with a dash of haze and a thin finger of creamy ivory foam. Quite nice!

Smell: fruity with a nice, light tartness and a bit of subtle funk. It rather works for me.

Taste: a bit of farmhouse, a bit of funk, a bit of tart and a bit of butter. Nicely balanced and quite tasty.

Mouthfeel: medium body with a decent carbonation and creaminess.

Overall: a nicely balanced and refreshing wild saison. Drinkable and tasty!
