750mL bottle purchased at Nectar at Kendall Yards in Spokane for $15.99. No freshness date. According to the label this was aged in oak tanks for 4 months with Brett, then dry hopped.
Poured into a St. Bernardus goblet, this was a cloudy, yellow-amber color, with a big, rocky bone-white head. Said head dropped fairly quickly, but was easily agitated back to life. Spotty lace.
Spicy and bretty in the nose, with some mildly lemony fruit notes as well. The Brett is low key enough to let the spicy Belgian yeast take lead, but only just.
Saison with a side of funk! Spicy, funky and fruity, in that order, pretty much. The spicy notes noted in the aroma rule the flavor as well, with the funk running 2nd place as a strong supporting player. Very dry, with a light, slightly astringent lemony citrusy fruit flavor that especially comes to the fore at the finish, which concludes with a satisfyingly dry zap to the palate. The oak doesn't stand out too much to me, other than a slight "woodsiness" in the background that is subtle enough to make me wonder if I'm imagining it's there.
Body somewhere between light and medium, closer to the former. Holy Mountain totally nails that elusive, almost effervescent mouthfeel that seems difficult for a lot of American brewers to recreate.
I really like this beer. I think this found it's way to Spokane through the good offices of Nectar's owner- Holy Mountain beers do not normally get distribution this far from Seattle. That's a real pity, as I would love to try some of their other beers. I'd also like to try the standard version of The Seer, and see what it's like without the oak aging.
