Brewed in December 2016, Hollow Tide incorporates Pilsner malt along with a large portion of malted and unmalted wheat and oats. It was lightly hopped with a blend of EKG, Crystal, and Citra. The beer was then transferred into an oak foudre, where it fermented with over 400lbs of Wickson apples from Harmony Orchards in the Yakima Valley. It fermented with one of our favorite house mixed cultures along with the wild yeast from the apple skins. After spending 3 months in oak, the beer was then packaged and bottle conditioned with Brett.

This one pours a clear light dirty orange, with a small head, and not much lacing.
This smells like sour apple, sweet apple skin, grassy hops, light oak, and light white wine and Brett.
This is a really fun beer. I was wondering if it would just taste like apple cider, and I'm happy to report that it doesn't. There's a light and funky apple presence here, with a grassy funk and a slightly grassy hop flavor. I get a little bit of pilsner malt, and a funky fruity Brett flavor on the finish.
This is light bodied, crisp and pretty clean, with a slightly lower level of carbonation.
I can always count on Holy Mountain to make some really unique and interesting beers. This one tasted great.
