Wheat table beer fermented in oak with a house mixed culture incorporating Brettanomyces and Lactobacillus. It was then aged in puncheons with Sudachi fruit zest and juice. Refermented in the bottle with Brett.

This one pours a glowing yellow color, with a small head, and basically no lacing.
I don't really know what Sudachi smells like, but this smells so fruity and tart and wonderful. It kind of smells like a cross between a lime and a mango, maybe some tart grapefruit, with some wheat and acidity.
This is really delicious. I wish it was a little more highly carbonated, but the Sudachi works super well- there's a lot of really pleasant tartness here. It's just a bit sour. The base beer doesn't come through as strongly as you'd hope, but you do get some funky sour wheat. There's some lactic acidity, too. All in all, despite a lack of complexity, it's super delicious.
This is very lightly carbonated, with a soft acidity that lingers pleasantly.
Holy Mountain continues to really impress me.
