GRISELLA is a brand new Biere De Miel brewed with Pilsner and Vienna malts, along with spelt, dark wheat, and bourbon barrel aged honey. It was hopped lightly in the kettle with German Tettnang and fermented in previously used cognac barrels with a house mixed culture. Refermented in the bottle with Brettanomyces.

Beautiful crystal clear burnt honey golden colour. No head to speak of, but visible wet bubbles. A more aggressive second pour gives an initial swell of white fuzz, but again it settles back down to non-existant before long.
Nose is tart brett with a touch of green apple and white wine grape must.
Flavour builds up a ramp of smoothe green apple and white wine and honey to a raspy slightly harsh brett finish. Honey mostly comes in between sips, and I get minimal of the brandy barrels if that. Some supportive hopping evident, mildly juicy and grassy, but really only when I look for it.
Sharply carbonated and the brett and hops linger through a long finish.
Look, Holy Mountain knows what they are doing when it comes to brewing, and they are incredibly good at it. There is no evidence to the contrary here. This is well done and I enjoy it, but it's not one I would necessarily go out of my way for or pine for, at least compared to some of their other similar offerings.
