Providence of Sorrow was brewed with pilsner, malted and flaked wheat, golden oats, and malted spelt. A small portion of orange peel was added at the end of the boil, and then hopped with Mandarina and Saaz. It was fermented with a house mixed culture in one of our first foudres, where it continued to age for a number of months.

750mL into a tulip. Pours a clear golden straw with a minimal white head that dissipates quickly.

Aroma is grassy, vinous and funky. Green apple and pear, Smarties.

Taste is likewise tart, bright and crisp. Same green apple from the nose, pale dry biscuity malt, a touch of apple cider vinegar and dry white wine. Plenty of oak.

Mouthfeel is super refreshing, light, drinkable. Finishes semi-dry.

Overall a really nice saison/wild ale from Holy Mountain.

Cloudy goldenrod pour with a two fingers of an eggshell white head. Oak is front and center in the smell, getting orange, yuzu, brett, and grass to bond with it. Taste also leads with the oak, waltzing with yuzu, orange peel, brett, barrel funk, light white grape, grass and hay. Feel is oaky too but not the star, here that is the funk shaping and drying out the sip beautifully. Soft sourness with a whisper of acidity balance, carbonation is a tick high but it works. All around really well made beer

This one pours a slightly hazy golden yellow color, with a small fluffy head, and lots of lacing.

This smells like oak, buttery white wine, citrus, soft hay like flavors, and grassiness.

This isn't quite as great as most of Holy Mountain's beers, but it's solid. There's soft, doughy, and hay-like funk, with a touch of citrus and orange peel, along with a touch of white wine and oak.

This is light bodied, fluffy, creamy, and with a light carbonation.

I tend to like other Holy Mountain beers more, but I still like this one.

Pours clear golden, white head dissipates to lacing.

Aroma of light citrus, grassy and cracker malts, white wine grape, and some herbal and floral notes.

Flavor is mild citrus, green apple, white grape, grassy and cereal malt, and some floral undertones.

Medium body, tingly carbonation on the tongue.

Very enjoyable and easy drinking. Good balance of light dry and tart. Some good unique elements in the flavor profile make it memorable. Definitely worth trying, very pleasant saison. I could drink this all summer.

A: The beer is clear golden yellow in color and has a moderate amount of visible carbonation. It poured with a quarter finger high white head that left a small patch of bubbles on the surface and a collar around the edge of the glass.
S: Light aromas of oak are present in the nose along with notes of grassy hops and hints of orange peel.
T: The taste follows the smell and has stronger flavors of oak along with notes of orange peel and hints of grassy hops.
M: It feels light- to medium-bodied and a bit dry on the palate with a moderate amount of carbonation.
O: I liked the accents of orange peel and grassy hops in this saison. It was very easy to drink.
