Pours over two fingers of pillowy white head into my Willi glass. Retention is pretty nice and a finger remains after a few minutes. Initial lacing looks very good. Body is a pale gold, crystal clear, with a minimal amount of bubbles coming up, especially considering the glass. Some yeast sediment clouds things at the end, but I did that on purpose. Overall a really nice-looking beer so far.
Nose is wonderful. Appropriate level of sweetness plays with significant notes of bread. Very floral, with a little spice, almost cinnamon esque. Comes together to almost smell like a Saison pie. Esters, faint notes of bubblegum as well. If I had to use one word to describe this, I would say it smells “golden”. This is FANTASTIC, smells amazing.
The flavor is not quite as full as the nose, it drinks a little more conservatively, but still very very good. A little floral, some spices hit in the finish. Slightly bready. Esters, and faint notes of bubblegum. Flavors improve with time.
Carbonation is about medium, lively towards the finish. Body is light ish, but has some weight to it. A tiny bit sharp as times. While that sharpness is slightly abrasive here and there, it is generally welcome to balance the sweetness, which is significantly lower than the nose, but still present. I would not call this a dry Saison at all, though it does finish slightly dry. Bitterness is only noticeable for a hot second in the finish. This mouthfeel is spot on for this iteration. If this was a citrus forward, effervescent, drier Saison, it would need a higher carbonation, lighter body, etc. This semi thick, semi-sweet, medium carbed mouthfeel plays perfectly with the bread and other flavors, well done.
Drinkability is wonderful, sharpness might slow me down for a nano second, but overall this is just incredibly tasty.
Appearance also turned out very nice, retention wasn’t too amazing, but that lacing was quite thick all the way down.
Overall a wonderful beer. The nose is phenomenal, and at times it’s hard to notice anything else when it’s commanding that much attention.
