Brewed with freshly kilned Chinook, Amarillo and Cascade from our pals @royfarms, this IPA definitely calls for a CELEBRATION. We’ve adopted this as our sort of holiday beer, and this batch is tasting incredible. Hoppy, malty, all the things. Mercyful Fate/King Diamond fans, we see you.

Beautiful crisp deep amber colour. Good little half finger of off cream head that likes to linger around.
Nose is surprisingly weak. I'm not getting a whole lot in general, tbh. I know I've got a weak sniffer, but I'm getting maybe some light sweet toasty grain. That's honestly about it.
Thankfully the flavour is not so thin. It's actually quite pleasant. Gentle, building to a nice solid finish. There's some toasty light caramel and honestly it almost tastes like it has a little bit of rye involved, though I do not believe that this is the case. It's very smoothe. The finish builds into a nice bitter grapefruit pith finish. It's nice and old school and very well done (but that shouldn't be a surprise).
It's smoothe with light bubbles of carbonation. The body is so smoothe and so... I used the word gentle before and that still feels accurate, but there's a better word out ther esomewhere. I'm just having a hard time grasping it. I like it quite a bit.
Listen, this is clearly an attempt to ape off of SN Celebration. I can see that, and to be honest, this one is more pleasant to drink, for me. It's got that big bold bitter old school finish, but the build up of the body is just a caress of classic American hops and a nice blend of sweet and hard edged malts.
This hits the spot and I'm glad I saw it just as the guy at the store was stocking and this looked like the only one.

Clear, bright amber, medium sized dense head. Smell is slight toffee, LOTS of grapefruit rind. Taste is same, doubles down into piny resin bitterness, a little toasty bread. Mouthfeel is light and clean. Very nice beer.
